bata pa ko nung unang makatikim nitong local delicacy ng Baguio, ang "pinekpekan manok" .... many would say that its real name is "pinikpikan manok" but what the heck... malice aside, the former souds better... agree? besides its seemingly explicit name, pinekpekan manok it better known for how it is prepared... a native chicken is beaten to death by a stick a bit larger than a 12 inch ruler over woodfire... then cooked similar to the tinola style... hanep, yung manok parang naging super jumbo! it's like chicken on steriods! this process of preparation resulted to the creation of a number of monikers like: physically abused native chicken, hazed chicken, ginaruteng manok and a lot more... personally, i call it "blood-clot chicken" . ayos ba? natives from baguio say that this particular way of food preparation is a form of ritual to drive away evil spirits... they perform this ritual for special guests... kaya pg hinainan ka ng pinekpekan, VIP ka sa madaling sabi... nice huh? a dish perfect for vegetarians and animal rights enthusiasts! harhar!; ▶ Reply to This
